Slow Roasted Beef

A simple and delicious slow roasted top round perfect for roast beef sandwiches.

Ingredients:

  • 2 1/2 lb Top Round Beef (I would try to be sure it is somewhat circular. Easier to use a temperature probe)
  • Salt
  • Garlic Powder
  • Black Pepper

Directions:

  1. Start by dry brining your beef. Simply coat your top round in salt, pepper, and garlic powder. Wrap in plastic wrap and put into your fridge for 6 hours or up to overnight.
  2. When you are ready to cook, preheat your oven to 250°F.
  3. Place your probe into the center of your top round and place on a wire rack over a baking sheet. (for less mess, place foil underneath rack)
  4. Cook until your desired doneness. (I cook mine until it reaches 125°F this took about 1 hour and 20 minutes)
  5. Remove from oven and let cool completely. I put mine in the fridge afterwards so the meat can set and rest for longer, but if you are prepared, you can go to the next step.
  6. Using a sharp chef’s knife or a meat slicer if you have one, slice your beef into thin slices.
  7. Put on toasted buns and enjoy!
