Cheddar Bacon and Shallot Scones

Usually, when I make scones, I make sweeter ones with chocolate, but as the days started to get colder, I wanted to see if could create a savory one that is perfect after a long day. This is what I came up with after some research and honestly, I’ll say that having one of these warm out of the oven is fantastic! The process is simple and easy and I’m sure you’ll enjoy them too.

Ingredients:

  • 6 Strips of Bacon Cooked and Crumbled
  • 2 Shallots Diced
  • 2 Cups Shredded Cheddar Cheese (Extra sharp)
  • ½ Stick of Butter grated on a cheese grater + an extra 2 Tbsp melted for brushing
  • ¾ Cup Heavy Cream
  • 1 Large Egg and 1 Egg yolk
  • 2 Cups Flour
  • 1 Tbsp Baking Powder
  • 1 Tsp Sugar
  • 1/2 Tsp Salt

Directions:

  1. Precook your bacon to your desired doneness and cook your shallots over medium heat until translucent.   
  2. Preheat oven to 375°F
  3. Mix the heavy cream and eggs into a medium-sized bowl. 
  4. Mix the flour, baking powder, salt, and sugar in a large bowl.
  5. Add your butter and use forks to combine until the mixture incorporates until you get a soft sand-like texture.
  6. Add the bacon, cheese, and shallots, and mix with a fork.
  7. Add the heavy cream and egg mixture and mix until well incorporated. 
  8. Turn out on a lightly floured surface, press and form into a circular disc until it is about 1 inch thick. 
  9. Cut your circle in half and then cut how many pieces you wish from the two halves.  (I was able to get about 10 pieces in total for mine)
  10. Place on a silicone-lined baking sheet or tray and brush the tops with your leftover melted butter. 
  11. Bake for 19-20 Minutes or until the tops are golden brown.  
  12. Place on a wire rack and cool. Enjoy!
