Breakfast Casserole

An easy to make casserole for the weekend that everyone will enjoy.

Ingredients:

  • 12 eggs beaten
  • 24oz frozen hashbrowns
  • 2 Cups half and half
  • 2 Cups shredded cheddar
  • 1 Cup grated parmesan
  • 1lb cooked bacon (cut into strips)
  • 1lb cooked breakfast sausage (I used maple)
  • 1 Tsp pepper
  • 1 Tsp salt
  • 1/2 Cup green onions
  • 1 shallot diced

Directions:

  1. Mix all of the ingredients in a large bowl except the hash browns. Butter a casserole dish and place frozen hash browns on the bottom, topped with the egg mixture. Cover with foil and let rest in the fridge overnight.
  2. Bake covered in a 350 Degree oven for 90 minutes. Let rest 10 minutes before serving.
