Apple Risotto

For any of you wondering if you read the title right, let me tell you that you did. This risotto is sweet and savory and is sure to be a conversation piece if you make it. I was hesitant to try it out, but afterward, I was hooked. This pairs well with pork, but you can definitely make it by itself.

Ingredients:

  • 2 Apples Diced (can use whatever apples you prefer)
  • 1 White Onion Diced
  • 1 Shallot Diced
  • 4 Cups Chicken broth (use vegetable broth for a vegetarian option)
  • 1 Cup Arborio Rice
  • 1 Cup Parmesan Grated
  • 3 Tbsp Butter
  • 1/2 Cup Sherry

Directions:

  1. Heat a sauce pan over medium heat and melt 1 Tbsp butter. Once melted add your onions, shallots, and apples and sauté for 6 minutes or until soft.
  2. Add rice and stir for 2 minutes.
  3. Add sherry and let simmer for 5 minutes.
  4. Add Broth and continuously stir until the rice has absorbed the liquid and is creamy, about 30 minutes.
  5. Add the parmesan and the rest of your butter and mix until incorporated.
  6. Enjoy.
